Passionfruit Meringue Kisses

The most delicious little light treats you can find! Melt in your mouth, they do.. trust me ;) I made a batch or 2 for the wedding last week and they were a hit. Time consuming (they take an hour to cook!), but worth it! (Women's Weekly recipe).


Ingredients:
2 egg whites
1/2 cup caster sugar
yellow food colouring (I used pink)
1 teaspoon strained passionfruit juice
1 teaspoon cornflour

Preheat oven to 120*C/250*F. Grease oven trays and line with baking paper.
Beat egg whites, sugar and a few drops of food colouring in small bowl with electric mixer about 15 minutes or until sugar dissolves. Fold in juice and cornflour.
Spoon meringue mixture into piping bag fitted with 2cm fluted tube and pipe 4cm stars onto trays 2cm apart.
Bake meringues about 1 hour. Cool on trays (Important).
Meanwhile make passionfruit butter.

Passionfruit Butter Ingredients:
60g butter, softened
3/4 cup icing sugar
1 tablespoon passionfruit pulp

Beat butter and sifted icing sugar in small bowl with electric mixer until light and fluffy.
Stir in passionfruit pulp.
Sandwich meringues together with passionfruit butter.
