Chocolate Chip Biscuits
Ingredients
100g butter
1/2 cup sugar
1 tin condensed milk
250g milk chocolate bits
2 1/2 cups self-raising flour
Method
Beat butter and sugar.
Add condensed milk, flour and chocolate bits.
Spoon onto trays and bake in moderate oven for 10-15 minutes.
Makes a large batch of biscuits.
Enjoy!
Gingerbread
Ingredients
250g butter
1 cup sugar
1 cup golden syrup
3 eggs
1 cup milk
1 tablespoon ginger
1 teaspoon cinnamon
1 teaspoon nutmeg
2 teaspoons bi-carb soda
1 small cup boiling water
3 cups plain flour
Method
Cream butter and sugar. Add eggs one at a time, then syrup.
Add milk and all dry ingredients sifted together. Add soda in boiling water.
Bake in two loaf tins or one large slab tin in moderate oven for approximately 40 minutes.

Orange poppyseed muffins (Gluten Free)
These sweet little cakes were very yummy! Very easy to make and can be made with normal flour or with gluten free flour. I used gluten free flour in these for the wedding, so there would be something for gluten intolerant guests. You can also substitute the orange juice/rind with any other citrus fruit including - lemons, limes, mandarins, blood oranges if you wish. I was very happy with how they turned out :)
Ingredients:
1/4 cup poppy seeds
1/2 cup milk
250g butter, softened
1 tablespoon orange rind, finely grated
1 1/4 cups caster sugar
4 eggs
2 1/4 cups self-raising flour (gluten free)
3/4 cup plain flour (gluten free)
1 cup sour cream
Preheat oven to 180*C/350*F. Prepare muffin cases in muffin tray.
Combine poppy seeds and milk in small jug and soak for 10 minutes.
Beat butter, sugar and rind in small bowl with electric mixer until light and fluffy. Add eggs, one at a time, beating until combined between additions; transfer mixture to large bowl. Stir in sifted flours, sour cream and poppy seed mixture, in two batches.
Spoon mixture into muffin cases and bake for 10-15 minutes, or until firm to touch.
For the icing, I just made a buttercream icing (butter, icing sugar & a splash of milk) and also added a little orange juice to it for flavour. I piped the icing on the muffins, then decorated with just some finely grated orange rind.
Passionfruit Meringue Kisses
The most delicious little light treats you can find! Melt in your mouth, they do.. trust me ;) I made a batch or 2 for the wedding last week and they were a hit. Time consuming (they take an hour to cook!), but worth it! (Women's Weekly recipe).
Ingredients:
2 egg whites
1/2 cup caster sugar
yellow food colouring (I used pink)
1 teaspoon strained passionfruit juice
1 teaspoon cornflour
Preheat oven to 120*C/250*F. Grease oven trays and line with baking paper.
Beat egg whites, sugar and a few drops of food colouring in small bowl with electric mixer about 15 minutes or until sugar dissolves. Fold in juice and cornflour.
Spoon meringue mixture into piping bag fitted with 2cm fluted tube and pipe 4cm stars onto trays 2cm apart.
Bake meringues about 1 hour. Cool on trays (Important).
Meanwhile make passionfruit butter.
Passionfruit Butter Ingredients:
60g butter, softened
3/4 cup icing sugar
1 tablespoon passionfruit pulp
Beat butter and sifted icing sugar in small bowl with electric mixer until light and fluffy.
Stir in passionfruit pulp.
Sandwich meringues together with passionfruit butter.
ENJOY! x

Hi All,
As you all would know, my sister, Andrea was married last week to the love of her life, Josh. The day was absolutely beautiful in every way! From the meaningful, loving vows... the first kiss as husband & wife... the gorgeous dresses... all the special guests... the funny & serious speeches... the YUMMY desserts (tiramisu, pavlova, tortes, chocolate eclairs & MORE)... right down to the moment we said goodbye to them was beautiful.
I have to say our little girl looked beautiful & enjoyed the day too! (Photo by Casey)

Zucchini Slice
Ingredients
- 375g zucchini
- 3 rashers bacon
- 1 cup SR flour
- 5 eggs
- 1 large onion
- 1 cup grated cheese
- 1/2 cup oil
- salt & pepper
Method
Grate unpeeled zucchini coarsely. Finely chop onion and bacon.
Combine zucchini, onion, bacon, cheese, sifted flour, oil and lightly beaten eggs.
Season with salt and pepper.
Pour into well greased lamington tin and bake in moderate oven (180*C) for around 30-40 minutes or until browned.
This slice is a good everyday lunch or dinner one. Some people call it a quiche. Most people enjoy it, including my little girl :) Is so easy for her to eat and is tasty! It's nice served with either vegies or a salad, or just on it's own as a snack. You can also eat it cold & it's still yummy!

The beauty of nature
Rain falling in a mist.. Raindrops gathering on every surface.. Birds calling to their mates.. Rabbits playing & digging (in my garden).. Spiders busy weaving their webs.. One little girl sound asleep.. Peace & quiet of the bush.. Only the sounds of nature to hear.. Home sweet home :)
A little poem I found -
Strange how cobwebs make us sigh,
When we see them hanging high.
From the corners of our rooms,
Straight away we fetch our brooms.
Yet when strung on fence or wire
Sparkling with a diamonds fire,
Wet with raindrops or with dew
Lovely things they seem, it's true.
Feeling grateful for all the little pictures God gives us through his creations.
